I have made these several times and I love them! They are pretty easy too, so that is a plus!
I start out by cooking the chicken in the crock-pot on low for 6-7 hours. I put thawed chicken breasts in, sprinkle a package of Ranch dressing mix & a package of taco seasoning on top, then pour 2 cups of chicken broth on top.
When the chicken is done, mix 1/2 cup ranch (I use half spicy & half regular) and 1/2 cup salsa:
After that, place the chicken in a bowl and mix it to shred it:
So quick and easy!!
I usually add some of the broth (about 6 ladleful's) to give the chicken a little more flavor and to make sure it's not too dry.
After the chicken is ready, spray a 9x13 pan with cooking spray, then cover the bottom of the pan with 3 or 4 spoonfuls of the ranch/salsa mixture.
Next, take a (low-carb) tortilla and spread a little of the mix on it:
add chicken:
roll-up and place in the pan:
Top with cheese:
Bake at 350* for 25-30 minutes:

Make-Over Sleep-Over Party!
Last Friday, Lily had some friends over for a make-over sleep-over party! She was so excited about it!! We got some fun stuff from the dollar section at Target to put in a treat bag for the girls:
Mirrors to decorate, Princesses to color, and brushes!
On the table, we had wands, bracelets, rings, nail polish, hair chalk, lipsticks, blush, and eye shadow.
Lily & I gathered up all of her princess dresses (that didn't look like they were falling apart) and hung them up for the girls to choose from.
For treats, we had cookies shaped like dresses and nail polish:
and cupcakes that looked like high heels!
When the girls got there, they started decorating their mirrors and princesses, then dug into the make-up!!
It was so cute when they helped each other with their make-up!
After they had applied (and applied, and applied...) make-up, they got into their jammies and settled in to watch the new Tinker Bell movie.
This was the aftermath:
Lily's little friend, Madeline didn't spend the night (she's only 4) but the other girls did, and right after breakfast, they were back into dresses & putting make-up and jewelry on!
Then they rehearsed a play and put it on for me!
Then it was time for the girls to go home. Lily had a ton of fun and wants to do another sleep-over soon!

Spring Break Fun!
We had a pretty low key Spring Break, but we still had fun! We started it out by Zach having a friend over on Friday, then we were in the St. Patrick's Day Parade on Saturday, and on Sunday, Lily and I went to Disney on Ice. Monday, the boys had fun playing their computers at Jeff's office while Lily & I went to see Cinderella in the theatre! It was so good!
Then on Tuesday, while Lily was at a painting class, the boys & I went to All Star Sports where they played in the arcade. Zach won 1,000 tickets on one game! He was very excited!!
When they were all done, he had about 1,200 tickets and Ri had about 230. Zach was a super nice big brother and let Riley use some of his tickets to get the giant alien and then got more stuff for him and Lily.
We picked Lily up from her class to see her signing her name to this beautiful butterfly!
Then we grabbed half price shakes at Sonic!
On Wednesday, the kids took me to lunch for my Birthday at TJ Burger House and then we went to Sugar Sisters Bakery and they got cupcakes and sang happy birthday to me. :0)
Lily and I played with her Anna & Elsa dolls.....
and Zach put a party hat on Willow.
Then Zach & Ri serenaded me. ;0)
On Thursday, Lily & Riley's friends Averie & Britton came over for the day while their parents worked. Lily & Averie made cookies:
The boys built forts in the basement and shot darts at each other.
Then on Friday, Lily had a make-over sleep-over party (more to come on that later) while the boys and Jeff went back to All Star Sports and Orange Leaf.
So, that was our Spring Break!
