Mozzarella Stuffed Chicken Breasts

I don't normally put recipes on here, because I am usually a strictly follow the recipe kind of girl. I am not good at throwing things together to make something delicious. But, I had seen a picture of a recipe for mozzarella stuffed chicken on Pinterest & thought it sounded good. Of course, it was one of those pins that led you to only the picture.....no recipe. :0( So, I thought I could kind of make it my own. The first time I made it, everyone (except Lily, who doesn't like anything) loved it! So, when I made it again, I decided to make pictures so I could share it on here.

This is what you need:


Boneless chicken breasts, plain breadcrumbs, basil leaves, garlic powder, mayo, and a block of mozzarella.

The first thing that you do it cut the chicken lengthwise so there is an opening for the cheese:


Sprinkle on the bay leaves & garlic powder, and lay down two slices of cheese:


Roll the chicken up so the cheese is tucked inside & place on a baking sheet that has been sprayed with cooking spray. (I use foil because the cheese will leak out. This is easier to clean :) I still spray the foil though.)


Next, spread mayo onto the top & sides of the chicken, about a tablespoon full.


The next thing I did was sprinkle breadcrumbs over the top & pressed them in with my hand:


Cook these at 350* for 20 minutes or until done.
Ooey gooey goodness!

Random

Here is just a bunch of random stuff that has been going on around here.

Last week I had my 35th Birthday.....yeah.... ;0)


Zach made this sign for Riley:


AWE! See, they can get along!! :0)

After the last snow, Jeff made snow ice cream, but fancied it up by adding mint flavoring, green food coloring, and chocolate chips. They kids were in love!!


I tutor Mr. Ares twice a week, and this week, we had an egg hunt where he had to find the eggs, which had letters on them, in order of the alphabet. His motivator? The "Z" had candy in it. ;0)


These ice cream eggs are delicious.


Riley thought this was a good outfit that he put together:


Before I remembered how he was dressed, I let him go into the school to get Zach from scouts.....

This little cutie cracks me up all of the time!


I have been getting all crafty for Easter! I made this banner from printed off letters, and ribbon & wooden shapes I found in the $ bin at Target!



The kids are going to take these jars filled with peanut butter eggs to their teachers this week:


This is what my family room looks like right now....


I bet you know what the kids are going to be doing in the near future.....

St. Patrick's Day!

As they do every year, the leprechaun's came to our house, messed up our family room, and left gold (chocolate) coins for the kids. Here are some place they hid them:




The kids had fun finding them and the green footprints they leave behind!




This year, they got an extra treat from Jeff & I. Rainbow candies!


They were definitely excited about their haul! =)

St. Patrick's Day Crafts!

Today, we did St. Patrick's Day crafts! The first thing we made were hand print shamrocks. The kids painted their hands green:

Then pressed 4 prints onto the paper:


And added a stem. They all turned out cute! (Even Emma got to do crafts today!)





The second thing we made was a hand print rainbow with a pot of gold. Each of their fingers was a different color of the rainbow. (except purple, there are only five fingers & six colors!) Then they pressed their print onto paper....


and added a black pot and glitter for gold!


Here is Emma putting her glitter on.....what she really wanted to do was eat it. ;0)

Now we just have to wait for the leprechauns to come on St. Patrick's Day!

Happy Birthday Jeff!!

Today, Jeff turns 37! I wish we could celebrate with him, but he is in Denver. :0( We did get to celebrate with him on Friday though! :0) We had his favorite dinner, chicken fried steak, and the kids gave him their presents.


Lily gave him a Chief's frame for his license plate.


Riley gave him a new Chief's shirt.


And Zach gave him some new "bear claws" to use when he makes pulled pork.


Jeff is also getting his smoker sandblasted & repainted. He is very excited about that! =)
After presents, we had a peanut butter dessert!


Jeff, we want you to know that we love you SO much and are SO lucky to have you in our lives!! You are the best husband and father anyone could have & we are so glad you are ours!
